Making up less than 5% of the population, Ivory Kings possess a unique genetic trait that prevents them from absorbing carotenoids from their diet, resulting in a stunning white fillet celebrated for its delicate, ultra-buttery sweetness. While there is no official commercial tracker for the exact percentage of Ivory King salmon kept within state borders, local seafood suppliers note that the vast majority of the catch is kept locally because Alaska’s restaurants and resident fishermen aggressively buy them up.
