Scallops Deburgo Blake

A refreshing take on scallops.

  • 2 Tbsp butter
  • 1 Tbsp olive oil
  • 2 tsp brandy
  • 1 clove garlic, minced
  • 2 Tbsp minced onion
  • ½ tsp chopped fresh rosemary
  • 14 oz scallops
  • Honey


  1. Melt the butter and oil together in a skillet. 
  2. Add the garlic, onion and rosemary and sauté for a couple minutes until soft.  
  3. Add the brandy.
  4. Add the scallops in one layer and season with salt and pepper.   Sauté for 5 minutes and flip. 
  5. Cook for 1 more minute and then brush the tops of the scallops with honey.
  6. After another minute turn in the sauce.
