Halibut Parmesan
Cheesy and delicious, this soft and tender halibut dish will soon be a family favorite.
Servings: 2
Ingredients
- 12 oz halibut cut into 4-6 pieces
- 1 cup chopped onion
- 2-4 garlic cloves, minced
- 1 cup sliced mushrooms – portabello or white button
- 1 egg
- 3 Tbsp Milk
- Grated parmesan
- Seasoned bread crumbs
- Mozzarella cheese
- Marinara sauce – your favorite store brand or homemade
Directions
- Preheat oven to 350 degrees.
- Sauté onion and garlic briefly in a little olive oil.
- Add mushrooms and cook for a few minutes. Vegetables should still have a little bite to them.
- Make an egg wash with 1 egg and 3 Tbsp milk. Mix equal parts of parmesan and bread crumbs to coat the halibut.
- Dip the halibut into the egg wash and then crumb mixture.
- Cook in 1 Tbsp olive oil over medium to medium high heat.
- Cook until about ¾ done - just about 2-3 minutes per side. Remove from pan.
- In 2 individual casseroles (or one larger one), divide the halibut between the casseroles and top with the vegetables.
- Top with ½ - 1 cup marinara sauce and cover with mozzarella cheese.
- Cook at 350 degrees for 10-20 minutes or until halibut is done.
- Pop under broiler to brown cheese if necessary.
