Honey Barbecued Salmon with Greens

Honey barbecue sauce that is so versatile, you can put it on anything, but especially this salmon dish.

There is an optional dressing for the greens. Make the dressing before you start the recipe:

Dressing:

1 Tbsp malt vinegar
1 tsp honey
½ cup olive oil
2 Tbsp fresh cilantro
1 Tbsp chopped shallots

Ingredients

  • 6 4oz salmon fillets
  • 2 cups baby greens – or more if you’d like more salad
  • 1 cup ketchup
  • 1 cup honey
  • ¼ cup coarse grain mustard
  • ¼ cup chopped jalapeno chili
  • 2 Tbsp rice wine vinegar
  • 1 tsp tobacco
  • 3 Tbsp packed brown sugar
  • 1 Tbsp curry powder
  • 1 ½ tsp paprika
  • 1 tsp soy sauce
  • 1 tsp minced garlic
  • 1 tsp vegetable oil
  • ½ tsp Worcestershire sauce
  • ½ tsp fresh lemon juice
  • ¼ tsp black pepper

Directions

  1. In a heavy saucepan combine sauce ingredients and simmer for 15 minutes. 
  2. Cool slightly.
  3. Brush salmon fillets with ½ cup sauce and grill. 
  4. Baste with sauce.
  5. Divide lettuce between plates and top with salmon. 
  6. Drizzle dressing over top and extra sauce on side.
